Senior in High School-What Can I Do?

I've been looking into investment banking for the past couple of months and it seems really interesting. There is a slim chance I get into any target schools, so besides that one of the most common things people say is to "start early", but what am I actually "starting early"? Is it a good idea to start reaching out for coffee chats in high school? Like would an analyst/associate even want to talk with a high schooler? Should I touch some grass and enjoy my senior year? I'm just curious for what my plan should be leading up to college.

I'd say enjoy your senior year. Bankers do not want to talk to high schoolers. Some of the most interesting people who "start early" did interesting things that they were passionate about in high school that they can leverage into good internships for their freshman year. Some examples are I built and sold PCs and one of my buddies started a food catering business. Doing something you are passionate about that has learnings and failure opportunities can be a great way to make progress into a career you want without losing on the fun of senior year.
