Looking to secure a summer internship that would ideally turn into a full time gig at a prop shop. Any suggestions on shops that recruit undergrads from non-targets but with AM and VC experience?

I think that as long as you're doing a STEM degree then you should be able to apply to the prop shops. I'd suggest going for the less known shops e.g. Wolverine, Belvedere, Volant, Akuna, Chopper. Don't get me wrong, these shops are great at what they do, but there might be less competition to get into them as opposed to going for the largest, most well-known shops e.g. Optiver, Flow Traders, DRW, SIG. Since there might be less competition, then they might be less picky about who they take onboard.

akuna is more picky than some of the largest guys you named
Beware though that won’t mean it’ll be easier especially with Akuna. I’ve heard they have a really hard math test for recruits.
I have to say from a couple of data points that Akuna's process is the most lopsided. They are not a super strong shop but their interview process is on par with Jane St.
