I've seen people interview for internships and full-time positions in other departments. Usually there will be a formal process, though you may need to network outside of this.
In terms of deferring a year - I was in a position where I may have needed to defer, and the bank where I had accepted a full-time position said they would hold a place for me the following year if I desired.
