What is the deal with insurance companies investing float? The concept makes sense but I can't seem to find any sort or information about careers working in those roles in insurance companies. Do they mostly outsource?

Most don't invest Buffett, if that's what you are asking. Most invest in fixed income of various kind to match their liabilities.

Yeah, it's not the first choice for aspiring fixed income investors. The primarily goal for insurance company is to match their liabilities via fixed income, so it's not focused on making money (if the company has surplus money, they can have more discretion on generating real alpha). So they tend to underpay but hours are good tho. They do hire but I presume people don't really move around in those roles because insurance companies tend to be in more suburban cities where people just want a stable laid back job.
Most insurance companies do allocate to hedge fund, private equity to a lesser extent too, but they don't need a ton of people there either. Also they have to worry about capital charges based on what assets they invest in to match their liabilities (all the regulatory funs).
