An IT engagement would be, Ford just bought a huge parts manufacturer and they need you to integrate all the ERP systems and inventory software.
For strategy, you will usually interface with a VP level, sometimes C-level exec (i.e. present to them, interview them, update them once a week etc.) For IT you will most likely be dealing with a middle manager.

Most top firms start their Associates at $105-120k base salary, plus a bonus range much bigger than that of analysts.
And what would the difference be between the strat firms and the operations/IT/other consulting firms?
More money, more prestige, better exit opps, more name recognition.
