Rolex Datejust II (two-tone) or Rolex Submariner?
Currently deciding between these two. I personally like the Datejust II. I'm looking for something with a lot of class and will say a lot about me when I go in to shake the interviewers hand.

When you shake, you shake with your right, meaning you're a lefty or you just wear your watch on your right hand, which regardless translates into an insta-ding.

Whatever fits your style the best. Personally I would go with the Datejust II over the submariner. Submariner is a little too gaudy (depending on which style you get).
If I may interject my two cents: I prefer less flashy and unique watches where most people wouldn't know what it is or how much it costs. I may get showered with Monkey shit here... but if the intended purpose of your watch purchase is to be a statement piece. In your words, "to say a lot when you go in to shake someones hand." I think there are better statement pieces out there than a Rolex in high-finance.
I think too many people wear Rolex in high-finance and they've become less vocal than one might think. It's similar to seeing a Range Rover or Mercedes in Newport Beach, CA. Both are still very respectable cars, but because you're subjected to seeing them on every street corner the car loses inherent novelty and voice. Keep in mind if you worked in a different industry, a Rolex would be an excellent time piece (I personally love Rolex).
However, because you work in high finance I might go with something that still carries the same value & heritage of a Rolex but has more novelty. An Omega is great choice (speedster). Other brands such Breitling, and Louis Moinet (inventor of the first Chronograph). If you're considering other watches at the $3k category, honorable mention would go to Bremont. I'm very impressed with what they've been able to accomplish in a relatively short period of time for watch companies.
I don't work in high-finance unfortunately. I'm at a shit CC on my way to a shit state college but yeah I have to do whatever I can do impress those interviewing.
If that's the case, I might consider prioritizing other things. All that money could be better used networking (coffee & dinners), and purchasing educational material for interviewing (assuming you're trying to do PE or IB).
I've interviewed people who showed up dressed to the nines (Hugo Boss, Stefano Ricci, and an expensive watch) but I was never impressed by their clothes. I generally look for three things in an interview; substance, competence, and consistency. I could care less if you show up in a oversized suit from the value rack, so long as you can execute your assigned tasks expeditiously.
