So I know this is probably a non-issue, but I know for interviews/generally you are supposed to keep the top button buttoned up while standing and undo it before sitting...
I have a few interviews coming up and my best suit was tailored to a 10 lb. lighter version of me, not that it looks ridiculous or tight when buttoned, but I'd prefer to keep it undone. I have some interviews coming up that are a few hours long with multiple managers and I'm sure there will be a lot of moving around- Is it an issue if I keep the jacket opened?
Should I just walk in buttoned and leave it undone from the first time we sit?

It should be a non-issue. However, something I'd keep in mind is that a 3 button suit might sit differently when unbuttoned than a 2 button suit will, and could be much more conspicuous. Again, still a non-issue in my book, but more noticeable.
As long as it's not a black suit you should be fine. 3 button suits are great but it seems that they are not as popular as they used to be.

You walk in with it buttoned. You sit and it's acceptable to unbutton it.
I wear a two button suit and I keep it unbuttoned. I think interviews have become increasingly more informal. I sat across from VPs and MDs that are wearing business casual. Wearing a suit as an interviewee is a must, of course, but to go through the formalities of unbuttoning this, and then that, and then back on again -- it's really just silly. Look well-dressed, clean, and mannered and they won't even notice that buttons are playing musical chairs.
This should go without saying, but no cuff links, tie clips, logos on the tie, or Rolex watches. And dear God no handkerchiefs.
You guys think tie clips are bad? Maybe it's because I've been in Japan for 3 years, but here they seem somewhat standard...
I interviewed on crutches and wore a sneaker on one foot, and still got the job. Pretty sure you'll be okay.
