Do Hedge Funds like Citadel, Two Sigma, AQR etc. hire people with Mechanical Engineering degree as Quantitative Researchers?
I have a Master's degree in Mechanical Engineering. I've had some courses which included probability and statistics, can code a bit with Matlab and have some experience with simulation software.
Is it a cut-off criterium or Quantitative Researcher application when someone comes from a background which is not ECCS, CS, Finance, Mathematics, Physics etc., if he has a strong CV (target school etc.)? Are there specific training programs for people who do not come from the aforementioned backgrounds?

Just my 2 cents but you’ll have to show that you can code very well (in python most likely) and that you understand most important statistical concepts like the back of your hand.
So, my advice would then be to implement the concepts you’ve learned in your statistics courses on coding projects oriented towards finance.
Your degree doesn’t really matter, my impression is that they want people who are very smart and able to solve their very complicated problems. But to do that you need to be able to code + understand stats extremely well.
Take my advice with a grain of salt since I’m also currently Msc student (friends and I recruited for those positions last fall tho)
