if someone has a proven trading track record but wants to get experience on how a hedge fund runs to possibly set up his own fund, what is the best way in doing so?

Yes, although if you are as good as you say you are, you should be able to network your way into a few informational interviews and your investment ideas should prove to them that you know what you are doing.
