be able to explain why you only have a 3.0 -- what class did you not do well in? one bad sememster, Major GPA? learn how to sell yourself.
go to every info. session and network.. do your homework - know why you wantto work for each particular bank before you go into the interview and do MANY mock interviews before your first one. you may only get a few shots.

and type in boutique or list of firms...you should be able to find some good threads listinga bunch of banks. then go to their websites and learn more.
I am a U of M alum and I eventually went on to become an IB analyst. While I was an analyst, I was really involved in the recruiting process and I think the above poster is correct in strategy. If your major GPA is higher, you might want to consider adding that as well, but you will definitely have to be able to explain away your 3.0 GPA.
I know you are an Econ major, but try to find out when the banks are visiting the business school undergrads and go to those sessions. Talk to the people afterwards and find an associate or analyst that you can talk to and get their contact info. It is key for you to try and create a mentor type relationship with this person. For example, after the initial presentation, contact this person as much as you can without being annoying and reiterate your interest and see what you can do to prepare for the interview.
THe good news is, IF you can score an interview you have a good as shot as anyone if you do well in the interview answering their questions.

It will take longer but it's possible. I held out with a 3.2 from ucla and passed on other jobs but eventually landed one. I'd say it was worth the wait. Just know you shit for the interviews and talk to friends at BB and get interview tips.

look, if you're a junior as you claim you are, then recruiting/interviews won't be until the beginning of NEXT semester. and even if it weren't, what are you talking about? why would you be missing out?

With a 3.0 as a senior, you won't be able to raise it that much even with a straight 4.0. Hopefully your better grades have occured recently. Other than that, you'll have to find some way to connect with a recruiter to even be given a chance to interview. Once you interview, you better wow them with your analytical ability, to overcome the likely belief that you may be weak in that area.
because i'm a transfer student, my gpa is only calculated from my new university grades from a total of 24 credits. i'm fairly confident i'll end up with a 3.8+ this semester so in December, my gpa should be around 3.34+

Pick up another major or minor like accounting or finance (if it doesn't require you to apply to the business school, if it does, it might not be worth it). Postpone graduation for another year, pick your grades up this year, look for summer internships, and interview full time next fall.
