Can I break into IB at 27?

As the title suggests, I am worried that my age is turning to disadvantage (background too). I did a CS bachelor's, worked as SDE for a couple of years, and then went on to do masters at a French target HEC/ESSEC/ESCP. It's a 3-year program (really long!!!) over which I worked part time at a manufacturing company doing FP&A and an internship at a MM in Sustainable Debt Advisory. I really want to get into IBD - M&A/LevFin/ECM, and have been grinding technicals & networking for a long time.
The thing is, I am not a French speaker & this limits my opportunities in France (as an expat, other EU countries are not an option due to VISA restrictions). Middle East can be a best option but the competition is just insane. I sent over 800 cold emails and finally managed to get an interview with an EU/UK BB. Got done with the recruitment process and honestly it went really well.
I somehow feel I might not be able to convert this (given no M&A experience) despite giving my best. What worries me is that I don't have enough time left for starting an off-cycle internship as I graduated recently.
My questions are:
1) Can I do an off-cycle after graduation? If yes, how soon before it gets too late?
2) Do I even have a chance (like 5%) to break into a decent IBD internship in the Middle East, given my odd experiences in FP&A and SDE?
3) Are firms open to recruit a 27-year-old as an intern?
