I have tried the Beta version on Microsoft's website. They've changed a lot of the UI but the features are essentially the same. I'm pretty sure you can still download it on their website if you'd like to give it a shot.

I have the final Excel 2007, and have been using it for a couple of weeks. The shortcuts still "work", per se. The File, Insert, etc. menus no longer exist.

There are two separate forms of keyboard shortcuts now. Legacy shortcuts (Alt-e-s-t, Alt-o-e, etc.) that we are all used to, and the new shortcuts with the changed menu system.

Legacy shortcuts don't work as well as they should. For example, if you do any legacy shortcut too quickly (which I'm used to doing), it wont' work. You have to type in Alt, wait a second, type in E then S then T. It's my opinion that power users will have to retrain to pick up the new shortcuts.

All in all, I'm disappointed with the keyboard shortcuts, but everything else is really cool. A few new features, and a very nice UI.
