Is it better to boost GPA with obviously easy classes or to do a little worse (Say Bs/ 3.0 GPA average) in harder ones from a resume standpoint? For context I'm in a target school.

Juice ur GPA . Nobody looks or cares about your classes. Just take a few decent ones to throw on your resume.
GPA doesn’t matter as much as people think.
GPA boost if you think you need it to get to whatever cut off you’re facing, be it 3.0 or 3.7. Beyond that, personally I’d take something that interests me. If the latter, I’d ensure that the prof is solid / low chance of permanently damaging GPA (i.e. 3rd year + math/sciences or history/literature classes where only one person gets an A- and is the highest among a class of 80).
The above comment is correct. Get your GPA to a 3.7, then it doesn't matter and you can take interesting & hard classes
