Say you were to get offers from multiple banks, would the ones you reject be much harder to get into in the future since you rejected them once? Is there danger in applying to too many places?

None. If you know you’re going to accept another offer (that has been officially received, not speculated) it’s best practice to respectfully decline outstanding offers as soon as possible as to not waste their time considering other applicants.
Be respectful, make sure you connect with your contacts on LinkedIn, and try to focus on why you think the other bank is a better culture fit right now. Depends on the individual situation and bank in the future, but it is less likely that you'll be able to hop over for an analyst position. Who knows after that though. Apply everywhere you can... banking recruiting can be a crapshoot.
