If we wanted to talk about a deal in an interview, how late would be considered "too late" for the deal to have transpired. Is something from 4-5 months ago still as good as one that is happening now?

Depends on the context... If someone asks "What is a recent deal that you have been following and that you find interesting?" and you start talking about a deal from 4 months ago they will likely assume you don't pay attention to deals because you don't have a recent one...
