I got offers from Goldman Sachs, Evercore, Morgan Stanley, PJT and Centerview. What do I do?

Leave all that on the table, and join the navy of course.
Get laid
Tell us how you did it, no kidding
reject all and go into S&T as you will have much more exit ops/career stability
.
These are all outstanding offers. Your dependence on what you take really goes back to what culture and team you fit with best. At the end of the day, a top-bucket GS candidate will absolutely be competing with the Evercore guy who's in the generalist M&A position waiting for a real team placement. Based on the names you gave, I really do recommend going with the team you best saw a good culture fit with. All the opportunities will yield you good exits so it's up to you to make a judgement call on who, based on your interactions, will be the best fit.
