Investment banking to the global hospitality industry

I am a 4th year VP at a BB investment bank and I’m thinking of leaving in the in the summer. I am one of the few people who enjoyed IB as I am learning a lot of valuable skills and key people however, the work routine is starting to become monotonous.

I’ve always have been interested in the global hospitality business (e.g. high-end nightclubs, cafes and restaurants, possibly hotels) however, I don’t want to just be another owner of a restaurant or a nightclub.
 

I want to establish a major hospitality group like Hakkasan or Tao Group but, I am wondering how I can use by IB experience as leverage within the hospitality industry? I’m also wondering how could I achieve this from a private equity standpoint to if possible? 
 

Anybody with any ideas on how to achieve this seriously would be immensely helpful, also any questions about IB in general I would be happy to answer.
