Solid Rising Freshman Major Plan?

I am a rising freshman at HYPS wanting to recruit for IB (preferably PE/HF but conservatively IB) considering my major choices rn. I am being sure to choose the easiest classes possible for GPA maximization. At the same time, I am very uneasy with the development of AI and especially where it will be in the next 4-8 years and its corresponding headcount reduction, so I want to also have my premed reqs done so I can pivot if stuff gets really bad. Anyways, here are my options:

Option 1: Solely a bio major, take econ classes along the way

Option 2: Econ major taking premed classes along the way

Option 3: Econ + bio major, premed reqs done

Would it be wise to change the econ major to something else? Do any of these as they are  limit me for recruiting for IB? For PE and HF out of undergrad? Thanks!
