Graduated from a non-target school and have no summer analysts or internships lined up... what now?

To make this short and sweet, I have a problem. I am looking to break into I-banking or PE/HF but I come from a non-target school (Florida Southern College), a gpa of 3.67. I have recently just graduated and I am going into graduate school immediately. Why you might ask? I am a student athlete with one more year of eligibility (a redshirt senior). Due to the covid-19 pandemic I am unable to obtain any internships this upcoming summer. What should I do this upcoming fall regarding landing a I-banking or PE/HF internship even though I have graduated? What is my best bet. Any advice will suffice at this point.

Honestly, I think your best bet is to just try and get a job in general. It's easier to get a job once you have a job and, as long as you can craft your story, you may be able to eventually get an MBA or join an analyst program.

You should be trying to network like crazy, multiple calls per day hunting for opportunities. You're an athlete so start calling alumni and friends of the program.
