I own a small business on the side and it's very operational. These are the things that office jobs won't really teach you about. Generally, highly operational businesses would be helpful in running your own shop, ideally in the same industry or niche.

i.e. working for amazon if you are planning on launching something in eCommerce
working at a larger car rental firm if you are launching supercar rentals, ...
