Masters Programs and which ones are best for a future in IB

I am currently a senior entering my final semester as an Economics and language double major and a 3.66 GPA. I also play a varsity sport, and was provided an extra year to compete thanks to the COVID outbreak. With this extra year of eligibility I really wanted to pursue graduate studies while still having fun and competing, but I am also trying to be cautious in what I pick. I am also preparing to be an analyst in NYC IB as soon as I graduate, and I want to make sure that whatever I choose to study in the Masters program will be beneficial to me for IB in the future. 

Here are the current options:

Mechanical Engineering - Well aware that it is a very strong degree. I would love to graduate with it, but my main concerns are me being able to get accepted without a BS degree and being able to complete the coursework. 

Mathematics - Same as above. I only took until Calculus 1. Bear in mind I am prepared to suck up the difficult course work.

Psychology - Is this helpful for IB when its Masters?

Unique New Mix (Business, Tech, Sustainability) -  There is a consideration for a new masters program but it has not been implemented yet. It would consist of these three topics. 

If anyone is aware of any way to continue to pursue athletics at an institution in their 5th year without sticking to their masters programs, please let me know!
