Resume and Cold email important question

I was accepted to my current school (a target) from a non target in August but couldn’t attend my current school this semester due to a shoulder surgery. Can I still say I’m a student at my current school in my resume and cold email even though I haven’t take classes yet or do I need to say “I’m transferring to [name of school]” in the cold email and resume ? I’ll be one in a month and may already even technically be listed and qualify as a student. However, since my end date at my former university is May 2024, if I don’t put incoming student or something like that, a reader could probably think that I went to the school I’m transferring to this semester then they would wonder why I’m not part of any activities or athletics and why wouldn’t I have relevant courses. For what it’s worth, for the school I’m transferring to, I list on my resume “Expected relevant courses and expected activities”. Could someone tell me what I should write? I was told by an analyst at a top EB to not say incoming student but I want some more perspectives.
