As the title suggests; does anyone know whether Canadian banks are able to sponsor? This would be for an EU applicant for the position of Summer Analyst.

How many points do you get for EE and/or SFW?
At your age, I wouldn't be surprised if you have enough to just get the ITA.
Have you done IEC before and would you qualify within CEC?
My CRS score would be 428, but I do not think I am actually eligible due to no 1 year of continuous, paid, professional work experience.
I have not participated in IEC yet, but I know there is usually only limited availability in the country I am from. Right now you need a valid job offer to participate (which would make it easier I guess?), but that means the bank would have to be willing to provide me with an official offer of employment letter to be used for my IEC candidate profile. Would that be the best way to go?

The easiest way? IEC. That is how I did it, and had one full year of paid work through a job I arranged beforehand. Required about 250 applications and I had roughly 20 interviews afterwards. about 11 companies took me to the second round and I had a total of six job offers after round 2 or 3. Canada is a younger country with lots of opportunities if you are a bit more open than in NYC or London.
After my full year I left Canada but looked for jobs back there. But, because I qualified for Canadian experience class, my employer offered me a transfer to Toronto.
The most interesting part was that FIVE hours after putting my details into the IEC system, I was already selected!
You never know what they are looking for, I'd just give it a go.
Asking a Canadian firm to provide a firm letter of employment is more difficult as they will have to justify why they can't find the talent locally. But there are plenty of people who achieved that as well. It all depends on how much work/effort one would put in and how many applications go out.
One caveat: based on my research and own experience, applying for jobs in Canada is different than in the UK or the US.
ie call the company first, email, apply, then follow up with a call etc all helped me a lot.
edit: just FYI / when I did the IEC there was NO requirement to have a job offer to qualify. I did it anyway so I could work an entire year.
