What is acceptable

Situation:
For awhile I had difficulty finding a job/landing interviews. I have been through two interviews with a grain trading company and both have given me VERY positive feedback and have more or less said they want to hire me. I go in for a meeting with them on Tuesday May 7th.

Oddly enough earlier today I got called for another position I had applied for. A Biofuels trader which in my opinion sounds a lot more fun. However I only am having my first phone interview on Monday May 6th.

Trying to not get ahead of myself but wanting to cover my grounds so I have no regrets. I am "fairly" certain on Tuesday the grain trading company will be giving me a job offer. Is there an amount of time I can request to consider this and possibly dive further into the process with the biofuels company?

I *think* ideally (will know more after phone interview) I would prefer the biofuels trader job... however I do not want to end up with nothing. Anyone know how to best deal with this situation?

TL;DR: nearing completion of one companies hiring process, just starting another. Is there a way to buy more time without looking bad?
