Got hit with an open container violation yesterday. Cop said I’ll have to pay a fine and go to court but it won’t be on my record. Will my future Mr. MD give a fuck? Should I be worried?

Oh damn. I don't know what your state is, but I would make sure it is not a misdemeanor. If it is a misdemeanor, lawyer up and get that dropped. If you just pay the fine, you're pleading guilty.
What state was it? I'm surprised you would even have to go to court. However, it almost certainly will not impact you. I think it is the same level as a speeding ticket.

I’ve never heard of this term before, are there any workarounds? Like putting lid onto booze after drinking, paper bag, drinking at home etc
If it's not on your record I don't know how a future employer would find out.
