After getting a summer internship, then securing a full-time offer at a BB, how much does your undergrad GPA come into play for future jobs after that and for grad school?
My classes this year and next senior year are tough, so my GPA will prob be around a 3.5 or little below cumulative. After a few years of work experience, do other banks/funds (for other opportunities) look at your GPA? How much does it affect your MBA applications?

After 2 years no one looks at it (at least hat has been my experience)
uGPA is a big factor in MBA applications. The lower your uGPA, the stronger your GMAT has to be, as well as good work experience, and recommendations.
It's not the impact long term after graduation, it's about the offers you'll receive straight from graduation. This will set the groundwork for the remainder of your career. If you end up at a BB/ top MM firm, you'll be fine (though GPA will be your hurdle getting in). Though if you plan to lateral later in your career, you won't have toooooo much of a problem regarding your GPA, your problem will be validating your experience.
Though GPA will give you such a significant disadvantage, you're better off putting in the work now (at least show some tailwinds on your last year).
I had a 2.66 undergrad GPA. Hilariously bad. Masters GPA was 3.83, so I "rebranded" successfully, but still...
Long-term, it hasn't impacted me, because my life is pretty cool right now, but coming out of school my job hunt was pretty brutal.
I was never once asked for proof of my GPA or even diploma for any of the 3 internships and 2 jobs I've had post/in-college. Are employers actually asking you guys for documentation?
Overall: It has not affected in many instances, but when it mattered it affected me in a big way.
Where it matters: 1.) First employer post-graduation 2.) MBA or Continuing Ed. Admissions 3.) Some Top 5 Companies (Tech, Engineering, Banking, Accounting, Consulting etc.)
Where it does NOT matter: 1.) Being a sound businessman 2.) Making money 3.) Expanding your network
