If you could go anywhere..
Say you had a chunk of free time prior to starting a new job, around 3 weeks, what would you do? Whether from your own experience or desires, or from what you’ve heard someone else has done. Backpacking through Europe, hiking a mountain, exploring an Asian country, or some sort of international program, etc
Eating your way through Europe. Start at the very bottom (Sicily) and drive (and of course, eat) all the way up until Scandinavia with lateral detours in Spain and Portugal. Not sure if 3 weeks will be enough and if not, pick 3-4 countries and eat everything there.
Basically pick any of the western European countries except for Germany and you're good

Hahahaha I mean, there are pockets of Germany where you can eat like a king too although granted, it may not compared to Italy, Spain or France where you'll have great food thrown at you from anywhere
Small village in the valley of the alps with my girlfriend, just away from everyone and eveything. Spending time to learn a different culture, gain new perspective in life and enjoy the nature and it's beauty. Or Italy is fine, as well.

Would put together a 3 week itinerary in South America. Been meaning to hit Machu Picchu and the rest of Peru, Colombia (specifically Medellin and Cartagena), Easter Island, and Rio
I second this. Peru is amazing. They have 2 top 15 restaurants in Lima so try to get a reservation early on.

in all seriousness, if you're already settled in your apartment/new city, agree with the above poster who said LatAm. I've dreamed about taking long Robert Pirsig-like vacations to exotic places, so I'd do that. buy a one way ticket to Panama, rent a Land Cruiser, and then disappear for a few weeks
This depends a lot on season. I took 10 weeks between exiting NYC and moving to Denver with a friend who was about to go to b-school. Our agenda was Argentina, a brief trip back to NYC, and then Dubai/Abu Dhabi, Italy, Croatia, Greece and Sweden. This was ~13 years ago so things would probably change if we planned it now.
