Only Ibiza on this list is a good idea but it will be too hot anyways. Go to Portugal and travel the coast if you insist on Western Europe

Check out Lanzorate. Beautiful desert island filled with volcanoes, stunning beaches, great food, and vineyards. Not a ton of night life, but an amazing experience. 5K will go very far as the island is incredibly cheap

I’ve visited the Canary Islands, but went to Gran Canaria with 4 chicks. We rented out a large place and it was a pretty good time. I met this 19 year old tattoo artist with red hair who wore wife beaters and didn’t believe in bras and we would walk around the island and have make out sessions. The waves are definitely better on Lanzarote.

What's your idea of a good time? Easier to give recs if we know what you're aiming for
Good night life, weather, ideally some beaches. But also don’t want it to be a complete party suck (i.e., would like to see some history / good food as well).
Was thinking maybe Greece and/or Croatia.
Can’t go wrong with a summertime lads tour around a few Greek or Croatian islands. Sandwich a couple party islands around a chiller / more cultural island or two to mix things up and get some actual R&R between the nonstop debauchery
Greek islands with good but not overwhelming crazy nightlife, great scenery and history, and great R&R are def out there. Some options are Paros, Naxos, Skiathos, Zakynthos, Kos, Rhodes, Spetses and more. Also, check out "Yacht Week" Greece for more on the party end of the spectrum. The Ionian Islands, are on the other side of Greece, the side facing Italy, sound perfect for what you are describing also.
