Need help to learn how to model commercial structures and commodities structuring.

Hi all. 

I was just hired for a company that works with carbon credits. 

I was asked to build a model that would allow to simulate different commercial structures, eg payment terms, prepayments bla bla and how it would all fit into the project itself, so a project that generates carbon credits. 

CCs are very similar, if not identical, to other commodities in terms of economics and , as I assume, modelling. 

My background is in RE, equities and ESG modelling. 

Do you guys have any hints on how I can learn this stuff? Any online courses? There is an O&G course at Wallstreet Prep but it's a PDF that costs 500USD.. no videos no nothing.
