I know I am very bad at putting concrete bullet points....any suggestions

also should I take down the dance club EC? just want to put something that is "fun" to talk about during interview

Hahaha, that is an awful way to finish up a pretty damn good resume. Get rid of that section. If I had two resumes that were exactly the same except one had "collecting pencil sharpeners" as their interest I would trash it.

Overall impressive stuff.
