MBA level/transferable courses while injured?

Update: It appears NYUSCPS is best in terms of still being able to sign up for spring term, etc. Not transferrable credit wise though.
My last post discussed my situation a bit, basically I had surgery due to a spine injury skiing, thought I'd be healed by January but I'm not, and its very possible it could be months longer before I'm healed.
Due to this, I am curious as to what options are available in regards to taking graduate level classes. I haven't done much research - and without the GMAT obviously I wont be in doing a semester as an MBA student. Do you guys have any suggestions for what (accredited or respected) options I have?
I want to take the class for:
a. learning
b. no dead space in my resume (even though I have good reason)
c. prevention of going crazy
I'm lucky enough that finances aren't a huge limitation. Interests lie within derivatives, equity financial analysis, financial engineering, and possibly a cryptocurrency course.
I'm aware of all the free resources available online, but drive is something that I'm lacking a bit given my predicament - and the stress of actual classes will fix that easily. Ideally I'd like to take one (possible two) in person courses in NYC.

You could probably take grad school classes if you get a signed approval from the dean. These classes will be for a non-degree student and you'll have to talk to the school if they would transfer to the program (I'm not sure). But, they might pique the interest of employers for them knowing that you had the initiative to keep pushing and learning and excelling.
Thank you. I'm going to reach out to NYU tomorrow, as it is close to my apartment and doable. They seem to have one program that might work (admissions closed for spring but a conversation or alum connection might help).

Hey hey,
TLDR: 2.5 years of work experience, quit due to back injury, still injured and most likely at least a few months before I'll be able to work. What should do I do to fill the gap in my resume? As far as the best options available to me, its either taking courses at NYUSCPS, which is just pay per course, and have it relevant to IB/equity BS, or take the time to study and take the GMAT, will be able to get good score but I don't think this is as valuable to employers, even a negative to some (fear of me leaving?)
I need advice as to what I should do with my time to better my resume/future employment opportunities while injured. I hurt my back months ago, recently had surgery which didn't fix the issue, will either need another surgery or alternatives (stem cell, etc). Either way I have too much time on my hands, and want to continue to add to my resume.
As per above, the only options I can really think of are 1) Taking courses at NYU (NYUSCPS) relevant to IB/BS (fin. modeling, valuation, python, etc) 2) Taking courses and taking the GMAT
Only necessity is that it be something I do outside of my apartment, for my own sake.
