offer dilemma

I am about to wrapping up my SA stint at a FoF. My boss had a talk with me recently and said that basically they want me and will likely to give me an offer in September. Given the current job market situation, I probably should just be happy and take the offer when time comes. But deep inside of me, I want to work on a trading desk.

Should I start applying to as many trading desk as possible now?

I'm also wondering how others deal with multiple offers. From what I understand, Banks usually want an answer within a week or so. How can one possibly set up an interview, and get another offer within that timeframe?

I guess it's a good problem to have, but I'm just wondering how others deal with it
