Should I wait till final year of uni to apply for S&T internship?

Hey guys, sorry if this isnt the right place but ill post anyhoo.

In my second year of uni at a non-target uni in the UK and would love to get into S&T after I graduate as a trader at the best bank I can but was thinking of delaying my application until next year. Reasons are firstly because I have next to none extracurricular to put down and I am hoping to do quite a lot next year. I am also most probably having a few months study abroad next year which I think would be an addition to my application as well as probably having some work experience at a BB xmas time.

Ive had several work experiences at a BB one at 14 and two at 16 however ive been on the resume section and it seems that most people are somehow able to put down that they’ve executed trades and done this that and the other whereas i pretty much just sat in and participated in the general office duties and pretty much watched and learnt (i sat at a trading desk very briefly maybe 30 mins but other than that was on more MO departments.)

so basically is it worth applying for internships this year based on no EC's from a very non target uni with that work experience or should I do as much as I can next year and wait till then to apply? Yeah sorry for wall of text! Hope for some serious replies please!
