Which route would get me the best chance for IB?

UNC: Computer Science and Applied Mathematics? (4 more classes I can get an ecomics major as well

NC State: Electrical Engineering

I really would like a technology background for future ventures.

UNC is better school. I would go there. Both are non targets for the most part but UNC has the perception of being a really solid public while nc state doesn't.

So If I chose UNC and they let me in their business school should I double major in CS and Applied Math (with option of getting ECON degree with 4 more upper levels)? CS and Finance? or the last two (though not really what I want for the long run) just Finance or Finance and Applied Math?

UNC is not a non-target. They have banks that do FT/SA OCR for FO roles. BAML is one I know off the top of my head.

You won't need to supplement the BSBA with a CS degree if you get into the Business School at UNC. Not saying that it will hurt/help.

The CS degree is for me. I love technology and hopefully be able to go from finance to more tech based corps like Google or maybe start my own business dealing with tech.

Agree with most of the above. UNC is a very strong school and does quite well, particularly in the south. Go with UNC.
