Yeah one could, but it isn't an efficient use of space. I would rather be able to say that I worked on 6 transactions totaling 1.3 billion instead of highlighting one 400 million transaction.
Also, you have to be careful about non-disclosure agreements. I know that my investor has dropped more than one broker and/or law firm for describing one of our transactions in their marketing material without permission. Your resume wouldn't be as widely distributed, but why take the chance?
I am somewhat vague on the resume. However, in addition to my resume, I have a one page "deal sheet" where I highlight usually 5 or so deals that I have played a significant value add role. This is where you can get real specific and not have to worry about space as much.

I'm not specific on deals at all.
I've actually never seen anyone talk deal specifics on a resume - everyone usually puts number of deals/gross dollars managed/originated/acquired.
I don't see why you can't be specific on a closed deal.
By "specific" I mean buyer/seller, cap rate, number of units, etc.

Depends, I usually put something like "led modeling and market research for $1 billion mixed-use development in downtown (insert city)"
Also, eventually you'll want a deal sheet with lots of details
I already have one
