What sort of comp can a PM at PIMCO make? What is the comp structure like? How many PMs are at PIMCO? It's a very large organization owned by an insurance company, so wondering if something like this is worth it, compared to a MM HF for something more niche in investing (rates, fx, etc.)

as expected, no one from the firm will answer
comp is below market for juniors and ok for mid-level. MD's however split 30% of firm profits and thus make ungodly money, however it is quite difficult to make MD as you can imagine.
There are definitely lots of "niche" products you can trade at PIMCO (i wouldn't call rates or FX "niche"...) - they incorporate a lot of hedge fund type strategies and are very sophisticated.
