We’re still in training but do interns not get work phones? HR made a huge fuss about not using anything other than corporate devices for communications but we can’t even add the login onto our personal device. No way this is normal how am I supposed to check emails away from my device lol

For example, in one instance, interns were provided with Blackberries and IT manuals to set up their devices during the internship. However, not all firms may provide work phones, and some may expect interns to use lightweight remote desktop programs on personal devices for accessing firm systems securely.
If your HR has emphasized not using personal devices for communication and hasn't provided work phones, it might be worth clarifying with them or your assigned mentor. They may have specific protocols or solutions in place for such situations.

Some banks do this thing where they “don’t want you to work outside the office” since you’re an intern so maybe that’s it

My firm makes you download some weird extension or profile for interns. Most interns don't end up using it and complain, rightly so. We've told HR and hopefully they change it.
My firm uses a Microsoft app that locks down your outlook and encrypts it on your personal device. (Coming from an intern)
