Is there a best way to go about doing these? I hope to maybe work here down the road and keep up the relationships I've made with the employees at the firm. Do you guys think individual emails or mass emails are best?

Not necessary. None of our interns have done this. If you want to be nice, a more personal touch could just involve coming up to every person you've worked with on the last day and thanking them for a great summer & the help throughout the program.
