How long did you take to study for Series 79 top off? Have 2 weeks to study for it and using Knopman. Is this enough time and how would you spend your two weeks?

Yeah - 2 weeks should be plenty. Your plan makes sense, I would take notes on the videos, do practice questions, and review the class summary and your video notes.
I had one full week to dedicate to the 79. I used the class summary, videos and did about 1000 practice questions. 2 weeks should be more than enough.
2 weeks is fine, make sure you really understand the concepts. You'll be able to tell what the question is asking for
