No, you should not. It's considered a negative attribute in hiring, even though it's technically illegal to consider.
Decline to comment on your race if you are white. I would also decline to comment on your sexuality. Or if you have to say you are bisexual (even if straight).
Sadly "positive discrimination" (aka racism) is a big thing now in banking. Even if it is technically illegal.
Play the game - get past the auto screen and then show them why it would be stupid not to hire you.
Personally I always just go for gay on the sexuality question then non-binary on the gender question and I tick yes for transgender. I initially thought this was weird but then I saw some people from university randomly identify as non binary and use they/them so no reason I can't as well. Therefore nothing they can do to prove you aren't.
We all know that banking is a white industry, controlled by evil old white men who want to defer any other ethnicities from entering the industry. As such, putting your ethnicity in your application will add significant weight to it. As you also know, those same evil old white men also want to defer women from entering the industry, so make sure you always mention that you are male. Moreover, no one wants to work with a fag. I usually add it next to my name on my CV to really make it pop. See the example below.

Emphasize the Pacific Islander part. Especially if it makes you look vaguely Hispanic.
Of course, it depends on your name. If your name is "Zhang Wei" it's far more difficult to not answer the race question than if it's "John Smith", let alone "John Esposito" (Italian, but sounds Spanish)

There was one thing I forgot to add. Someone else touched upon this, but if you claim a more "white adjacent" (as some liberals say) category it's both easier and the punishment is less if you're caught. Personally, I have some distant Latin heritage (distant enough that you wouldn't guess it at all, but close enough I have a (small) connection to it) and will make a point of it.
Anecdotally, I know (of) someone who was fully Han Chinese who claimed that he was Uyghur but that his parents had to change their names due to persecution for college applications. Obviously they couldn't go fly out to China and check, just like they can't check 19th or early 20th century genealogical records in Spain / Portugal or a white South American country. Worst comes to worst, you claim that it's your family's history and your "lived experience" says it's true
