Should you let people at firms that rejected you know you signed elsewhere?
This is not a troll post but genuinely curious - there were a lot of really nice people I coffee-chatted & interviewed with at other firms that rejected me, and I genuinely want to update them on how I have received a really good offer elsewhere. Will it be perceived negatively though (i.e this kid is trying to flex on us)? What do you guys think
The fact that you are asking if it will be perceived negatively should tell you all you need to know.
The truth is you aren't important enough to anyone you interviewed with that they should care. Also, as a professional courtesy, better to send them a feeler email 4-6 months into the new job thanking them again for their time and updating where you are and hope they are doing well (chance to reconnect).
