What are the target MBA from Canada that break into Consulting and Investment Banking in US?

There’s no such thing as a target Canadian school for IBs based in the US. You can aim for Toronto or Calgary offices tho
None. And I went to school in Canada. It's hard enough breaking into the handful of MBA associate roles within Canada itself. It's much, much tougher than the US because combined, all banks hire maybe 20 MBA associates across the country a year. Rotman's graduating class alone is 275. Getting into consulting is easiest from Ivey most likely; they place a pretty decent amount into T1/2 consulting per capita (much smaller classes).
Would you recommend MBA at the US level for Canadians? I had considered this but the fear of not landing a job in the US after followed by coming back to Canada on a lower salary is a big fear of mine.
You can stay in the US on OPT and even if you're kicked out after 12 months, you'll easily lateral to a Canadian i-bank (or Toronto branch of a bulge bracket). I know plenty of Canadians who went to US MBAs and are working on wall street.
