The beauty of IB is that it provides you with so many great soft and hard skills in a short period of time that you are capable of doing almost anything you want.
Corporate Development / Strategy / Finance are some other options besides the ones you mentioned above.
Hell, two years of IB experience would probably look pretty awesome on a medical school application and make you stand out. There aren't that many jobs out there that make you work 80-100 hours, which is honestly the amount of time you'll be studying and learning during medical school and residency.
