Do I count as Diversity?

I am currently a sophomore in college at a semi-target. As the job search progresses I am trying to consider my options as I apply for different positions (IB,S&T,Private Credit...). My family is Portuguese, and I have seen certain definitions that label this as hispanic. On the contrary, however, I grew up upper-middle class, and most people who see me would certainly consider me white. I'm wondering if I could get away with applying for jobs as diversity? Is this a good decision, or would employers see right through it, and could it ultimately end up hurting more than helping? Thanks.
