You can just tell them that you enjoyed the summer but ended up getting an offer to go directly into an investing role, so you won't be accepting the return offer.
Do I tell them during the sit down that I won’t return? What if I ask for some time and then formally decline after the internship concludes? Do I need to mention where I’m going?
If you've already accepted the offer with the growth equity firm, I don't really think it matters much how you go about this. I would probably wait until after the internship concludes to formally decline, but that's a personal preference. At the end of the day, you are an intern declining a return offer and not going to a competitor so they really won't care and will just wish you the best of luck. I would at least mention that it's a growth equity role so they don't think it's another back, but you don't have to tell them the firm or anything (although, i'm not sure why that would be sensitive information).
