Jumping in late here, but I'm in the same spot, trying to find a decent gift without going broke. On an intern budget, jewelry is a good move. I picked up a simple gold necklace from Ashcroft & Oak for around $250 and it's still worn all the time.
I'm also looking at a Seiko or Citizen watch in that $200 - $300 range, a decent leather bag, or just booking a weekend away somewhere. Jewelry still feels like the most lasting option though. Curious what others are going with.
Real answer: she likely already has something in mind and instead of trying to guess / missing, set a budget and pick a Saturday to take her to a solid shopping center (e.g. Saks or Soho if in NYC). Turn it into a date weekend by taking her to a café first and then letting her go pick out something with you, then you both have the memories of getting it together too
