Sounds redundant
You are celebrating the marriage and the two of you as opposed to her birthday or mother's day or another event specifically about her. As a result, I think the best gift is going to be something that reflects the two of you and not just some object she really wants. You know her best, but I wouldn't just buy her something. Take her to a place that you both have always talked about going to (Portland Maine, Lake Winnipesaukee, wherever). You could even rent a boat for the weekend and cruise around. There is some decent hiking up north too if she is the outdoorsy type.
One of my most successful 'date night' ideas is to tour really expensive real estate together with my girlfriend. You could do an adaptation of that: set up viewings for beautiful remote homes in Vermont, Maine, etc. Even if you have no intention of actually buying a place at this time, let her imagine your future together with a cute home, off the beaten path, amongst nature and away from the demands of your jobs. And the best part is -- doesn't cost you a nickel to tour.
