Second this - sashimi / nigiri (specifically toro) is far more prestigious.
Sushi rolls are inherently not prestigious because they’re an Americanized dish. Kinda like asking for the most prestigious place to eat orange chicken

If you're going rolls it's gotta just be the simple, whole ones. Just tuna avo or salmon cucumber. Yellowtail scallion is another S tier.
Anything that has more than two fillings are an abomination, you don't need that roll with three types of fish, spicy mayo, tempura and another layer of BS on top.
But the true prestigious sushi would be sashimi/nigiri.
