I've seen a lot of people get internships as investment analysts or in PE at Apollo as a sophomore, junior, or FT. Where are the applications for these programs?

Guessing target handshakes, clubs, websites, etc
They used to have a soph. program, not a junior year because they don't hire straight from undergrad so wouldn't make sense to have to the whole SA->FT process. Believe this soph. program is discontinued, although similar firms have soph programs and there are a handful of PE and HF SA Jr. year programs as well. Handshake is good but def do some company research / outreach with alums and HR.
