Gaining experience in development

For those of you that are in development roles, what has your on-the-job experience been like? I feel like a lot of what I am learning is through trial-and-error because we're super lean, so I have to wear a lot of different hats, so there's no one expert we have on staff. My bosses mentor me to some extent and provide decent feedback, but i do feel like sometimes it could be a bit more and the only thing that precludes them is time. I'm thinking this might be the standard and that I'm asking for a bit too much? We do small urban in-fill and we're quickly moving through so many deals and can really get into the weeds of some of these complicated projects that are just hard to grasp.

Curious to know what the experience is like for others. For context, I previously spent a couple years on the brokerage side of the business and it was a larger firm. I'll be honest, I did feel some level of security over there because we were brokering deals as opposed to taking on the risk of ownership. It definitely felt easy in that last job. This one has felt much harder. I've been in this development role for over 6 months now. It is considered manager/associate level.
